This talk will explore how different foods influence blood sugar levels, going beyond the traditional concept of the glycemic index. It will introduce key concepts such as glucose response, starch digestibility, and how the structure and composition/matrix, food processing, culinary processes of everyday foods impact glucose response and metabolism. Drawing on concrete research results, the presentation will illustrate that the modulation of starch digestibility in food products and the daily diet can help optimize glucose control and cardiometabolic risk profile in healthy and type 2 diabetes individuals 3.00pm – 3.30pm: Questions & Exchanges |
Julie‑Anne Nazare is an Associate Professor in Nutrition and Physiology at the University of Claude Bernard Lyon 1. She conducts interdisciplinary research on diet, metabolism, and food behavior, with a focus on how dietary composition influences health outcomes such as glucose response, food choices, and cardiometabolic regulation. Her work spans nutritional epidemiology, dietary interventions, multiomics biomarker analyses and includes collaborations on projects investigating food structure, postprandial metabolism, and the interactions between diet quality and physiological responses. Dr. Nazare has published extensively in peer‑reviewed journals and contributes to national and international research efforts on nutrition, dietary assessment, and metabolic health.
